A very nutritious dish that is easy to make and delicious - it has spinach, carrot, celery, and cod fish (good source of omega-3 fatty acids).
I started making this dish five years ago, when C was only about one year old. I like to make this for him because it's easy and fast to cook and at the same time very healthy and yummy. He still likes it until today - and in fact, I like this too! Sometimes the whole family have this served cold - as "rice salad".
Usually, C would have this for dinner (served warm) and I keep some for his lunch box (packed and served cold).
Ingredients:
2 tbsp olive oil
1 medium stick (60 gr) celery, finely diced
1 small (60 gr), onion, finely chopped
1 carrot, finely chopped
100 gr long grain rice
200 ml water
Few leaves of fresh dill, roughly chopped, or ½ tsp dried dill
150 gr Cod Fish
50 gr frozen chopped spinach
Grated rind of half a lemon - if you wish
Salt and pepper to taste
Method:
Heat the oil in non-stick frying pan and fry the onion and celery and carrot until translucent.
Add the rice and 200 ml water and bring to the boil, cover and reduce the heat.
Cook for 10 minutes then stir in the dill.
Meanwhile cook the fish by poaching in water.
When the rice is cooked stir in the spinach and grated rind of lemon if you like and cook further for 1-2 minutes.
Put a bit of salt and pepper to taste.
Flake the fish into the rice and serve.
Tips:
I have tried using fresh spinach and fresh baby spinach but somehow it doesn't taste as great as when I use frozen spinach.
You can substitute the Cod Fish with any other white fish and I have tried that but I think Cod Fish taste better, mainly because of the oil produced.
You can also add broccoli - if you wish.
