A very quick and easy dish to prepare, what's more they are very healthy and nutritious, too! I usually make this for dinner and keep aside a portion to be put in my 7 year old lunch box. He loves this!
Ingredients
2 cups of mixed brown rice (80%) and red rice (20%)
3 cups of water
1 red capsicum
1 green capsicum
1/4 cup of whole kernel corn
1/4 cup of slices fresh pineapple
1/4 cup of raisins
1 red onion
spring onion
1/4 cup of olive oil
2 tbsp of light soy sauce (salty)
juice of one large lime
Method
1) Cook rice in a rice cooker (2 cups of the rice in 3 cups of water). Cool down once cooked.
2) Chop one red capsicum, one green capsicum, pineapple, red onion, and spring onion.
Drain the corn from the package.
3) Prepare the sauce - 1/4 cup of olive oil, 2 tbsp of light soy sauce (salty), and juice of one large lime - mix them together.
4) Mix the cool rice and all the vegetables, add raisins and pour the sauce (you may not need to use all of them).
