Delicious and Tangy Orange Cake

A very pleasant and refreshing taste of orange in a piece of cake! It makes me smile and lifts my spirit. This is a very easy recipe and foolproof :-) As long as you measure the ingredients carefully and follow the steps diligently, you can't go wrong! This recipe only needs 6 ingredients. I love to bake something with less than 10 ingredients :-)

Every day, I have to prepare snack for my son to eat after school. He seems to be very hungry after school. I always give him a few bowls of fruits but he also need something a bit heavier. One of his favorite snack is Pandan Sponge Cake that I usually get from a very popular bakery nearby. It also sells Orange Cake and my son loves it too. So I thought why don't I find a recipe and try it.


I found what I think is a very good recipe and tweak it - and it turns out great! It is easy to make, moist and the texture is very nice. The orange taste is so pleasant and refreshing. My son said it's very yummy and myself ended up eating three slices within a few hours only.


Here is the recipe and how to make it.


Ingredients:

3 eggs

130 gr caster sugar (extra fine for baking)

160 gr cake flour

1/2 tsp baking powder

150 gr salted butter (melted)

1 big sunkist navel orange - to make 100 ml orange juice


Method:

Pre-heat the oven to 180 degree celcius and grease a loaf tin (around 22 cm x 12 cm).

In a bowl, beat the eggs and the sugar with mixer until pale and fluffy.

Sift in the flour and baking powder, stir well.

Add melted butter to the mixture .

Add the orange juice and zest, stir well.

Pour the batter into the loaf tin and bake for about 40 minutes or until skewer comes out clean.

Allow the cake to cool completely before serving.


Note:

The taste of the cake is very dependent on the oranges. I've tried making it a few times (with different type of oranges) and they didn't taste exactly the same. So once you find the oranges that taste the best for you, you may want to take note and keep using the same type.
