Blueberry Muffins


Sometimes, the blueberries from the supermarket are not sweet enough and my son wouldn't want to eat them so I make them into muffins instead. I could pack them in his snack box. A quick and easy recipe.



Ingredients

1 1/2 cup plain flour

1/2 cup sugar (sometimes I use brown sugar instead of caster sugar)

1/2 tsp salt

2 tsp baking powder

1/3 cup melted butter (or vegetable oil or olive oil)

1 egg

1/2 cup of milk

1 cup blueberries

Method

Preheat the oven to 180 degree celcius.

Line the muffin tray with muffin paper.

In a big bowl, mix all the dry ingredients : flour, sugar, salt, and baking powder.

In a separate small bowl, mix all the wet ingredients : butter (or oil), milk, and egg. Wisk them.

Pour the wet ingredients to the mix of dry ingredients in the big bowl.

Mix the dough in less than 10 seconds. Don't spend too much time.

Add the blueberries to the dough and mix briefly.

Scoop the dough and put it in the muffin tray of 10 - 12 pieces.

Bake in the oven for about 20-25 minutes or until skewer comes out clean.


Tips:

I tend to use less sugar so you may find this is not sweet enough for you. Make the sugar up to 3/4 cup or even 1 cup instead of just 1/2 cup.


I use olive oil to replace the butter to make it a bit healthier and more moist but the taste is better with butter.


I sometimes add 1/4 cup of raisins into the dough to make it Raisin-Blueberry Muffins (since I just use 1/2 cup of sugar).
